First we need to make the crepe batter. For this, you will need:
-2 whole eggs
-1/2 cup flour
-3/4 cup milk
-1/2 cup water
-1/2 teaspoon salt
-1/2 tablespoon butter
To make the crepe batter...
-Sift flour and salt and mix all ingredients together until flour dissolves
-Chill for 20 minutes.
Next, for the crepe filling, you will need:
-Fresh fruits in season ( mangoes, bananas, oranges, pineapples, etc)
-Selecta super thick ice cream
Now that we have everything we need, here's how to construct one idiot-proof crepe:
-In small heated non-stick pan, dip a cotton in melted butter and run through pan so the crepe won't stick
-Pour about 1/4 cup fo the crepe batter over the hot pan. Rolling pan around to make sure crepe batter covers the whole pan! No need to worry about holes! Just pour over a small amount of crepe batter on the holes to cover it up. Tadaaaa!
-When crepe starts to make some bubbles, place about 2 teaspoon of fruit on one side of crepe
-Sprinkle some crushed chocnut over fruit
-Pour over about a teaspoon of rhum.
-Top of with a spoon of Selecta ice cream.
-At this point, the crepe should start to get golden in about 3 minutes. Just peep under the crepe.
-Then cold over the empty side of the crepe to blanket the crepe filling. Place on dish and garnish with fresh mint if you wish.
You may try different combinations of filling. You can try to use cinnamon, different ice cream flavours, you can even try using savory filling as well. Use your imagination! (But for me I like my crepe sweet! Hmmm... Speculoos crepe!!!!)
The measurements in this recipe can make 10 crepes! It's like your very own crepe station. Crepe party, anyone?
